Lamb burgers with avocado and mango salsa

If you’re after BBQ summer heaven these tasty little burgers are a lovely alternative to beef. Coupled with avocado and mango salsa your taste buds will love you for it!

Lamb Burgers with Avocado and Mango Salsa

Ingredients – Burgers:
Minced lamb x 450gm
Red onion finely diced x 1/2
Sea salt x 1 pinch
Garlic x 2 cloves
Thyme x 1-2 tsp
Olive oil

Method – Burgers:
Mix all the burger ingredients together and shape into burgers/patties. Brush with a little olive oil if you fancy. Cook on the BBQ/grill until cooked through.

Ingredients – Avocado and mango salsa:
Ripe avocado x 1
Red onion x 1/2
Ripe mango x 1
Sea salt and pepper
Olive oil x 6 tbsp
Basil (fresh is tastier) x 4 tbsp
Garlic X 1 clove
Lime juice x 4 tbsp

Method – Avocado and mango salsa:
Dice the avocado, mango and red onion. Mix these together with the seasoning, oil, basil and lime juice. If you have time leave this to sit for 30-60 minutes to allow the flavours to permeate.

Lamb is a low allergenic meat ie it rarely tests positive for food intolerances. All of the above ingredients contain low levels of salicylates, additives, preservatives and colourings making this a low salicylate meal safe for those suffering from salicylate intolerance. Additionally lamb, avocado and olive oil are healthy fats that are all good for skin health and metabolism. Mango contains high levels of vitamin C, helpful for the immune system.

If you need a shortcut you can try this ready made salsa and then add the cooked burgers and avocado.
